P. strobus

Our flagship white wine—comprised of several different white and blush hybrid grape varieties cofermented together. P. strobus, or Eastern White Pine is very lightly aromatic and citrus-y, making it a natural namesake for a bright & delicately fruity white wine. This wine was originally developed as a field blend of organic Vermont grapes brought into harmony with some additional white hybrids. Drawing from the origins of this cuvée, it varies in character a bit more year-to-year than some of our other wines. We basically take the best-of-the-best white hybrid varieties as they start coming in during harvest, press them after some gentle skin contact, and then keep building it up throughout harvest based on the direction the fruit is taking the fermentation and what additional fruit we’ve got coming to end up with a balanced wine that reflects the growing season.
